Stuffed Tomatoes

Allow one tomato between two people - more if you LOVE tomatoes
 
Cut tomato in half, cut a slight "bowl" into the tomato halves. Save this.

In a bowl - mix a handful of dried bread crumbs (fine) add a couple of tablespoons Parmesan cheese. Finely chop a some parsley and a mince of garlic. Add some ground pepper. Mix together and put in the tomato bowls. Pour some olive oil over each tomato half. Set aside in a shallow dish. Cook in a 325 deg F oven 20 minutes before you serve.
